Recipe: Easy Tofu Soup

Simple yet Flavorful ! I love this tofu soup recipe because it is so easy and as with many soups, so versatile... and It is a great way to use up all the leftover veggies !
This soup makes a great lunch or dinner especially on a rainy Vancovuer day, it's light but packed with nutrients that our body needs - I love veggies in soups, because you get to drink in all those lovely water-soluble vitamins that are otherwise lost during boiling.
Recipe: Easy Tofu Soup - 4 servings
1 Package (530g) Tofu, any kind, chopped
1 Box (900mL) Veg or Chicken Broth
4 Tbsp Miso Paste, mixed with 1/2 cup hot water
1/2 cup Mushroom, any kind, sliced
2 cups Vegetables, chopped
1 Green Onion, chopped
Bring broth to a boil.
Add in miso paste mix.
Add in tofu, mushroom and vegetables.
Boil and simmer until mushroom and vegetables are tender.
Top with green onion and serve immediately.
Note: I used Shiitake mushrooms, bean sprouts and lettuce for my veggies.
